It is so true…
We are more creative when resources are scarce. When we don’t think we’ve got all we need, we’re forced to do things we’ve never done. Today was a perfect example. Working from home in ma PJs, I couldn’t be bothered making that trip to the shops. But in my mind the fridge was empty, the cupboards were bare, and I was HUN-GR-Y!
I put together what I thought was a crazy mishmash of ingredients. But it turned out to be an extremely tasty, gut loving and skin nourishing recipe (note: this isn’t always the case, and sometimes my creations are crap 😉 ). I thought this’d be a total flop, but to my surprise it was so satisfying! And a must share…

MY CRUNCHY CARROT + BUTTER BEAN SALAD
Ingredients
- Cooked butter bean and crunchy carrot noodles:
- 1 large carrot (spiralised)
- 1/2 knob of turmeric root (grated)
- 1/2 ginger root (grated)
- 1 tsp cumin seeds
- 1 tablespoon of bragg’s liquid aminos (tastiest alternative to soy sauce)
- 1 tablespoon nutritional yeast
- 1 tablespoon pumpkin seeds
- 1/2 tablespoon sesame seeds
- 1/2 can butter beans
- 1 tsp coconut oil (for cooking)
- To plate fresh:
- 1/2 cucumber (spiralised)
- 1 orange (chopped and peeled)
- 1/2 bag of mixed lettuce
- 1 lemon (juiced)
- 1/2 tbsp cold pressed sesame oil
- 1/2 tbsp udos oil (can use flax or extra virgin olive oil instead)
- 1 tbsp coconut yogurt
- 1 tbsp apple cider vinegar (ACV)
- pinch of salt
Instructions
Cooked butter bean and crunchy carrot noodles:
1.Grated the turmeric and ginger root in a pan with the coconut oil and cumin seeds. Fry until fragrant.
2.Meanwhile spiralise the carrot and put in the pan along with your fragrant fresh spices.
3.Add braggs liquid aminos, nutritional yeast, pumpkin seeds and sesame seeds. Sauté on low heat and stir for a few minutes
4.Then add butter beans and a couple of spinach leaves until warm and wilted. Then take of the heat.
5.Spiralise the cucumber and prepare the orange.
Plate up raw:
6.Place lettuce on the plate and add cooked butterbean and sautéed carrot noodles on top.
7.Then top with spirallised cucumber, coconut yoghurt, lemon juice, salt, ACV, and oils
8.Surround the plate with orange.
